The sunny dry weather has produced a bumper crop of soft fruit this year, including our cherries, so when nature gives you cherries…make cherry pie.  There was a limited amount I could pick, as they were so high up, which was good news for the birds and a responsible way to forage.  Cherries are a superb source of vitamin C, fibre, and polyphenols.  The children washed the fruit and took the stalks off, but we left the pips in because it creates a better flavour. Then it was simply a case of adding honey, vanilla and a dash of lemon and then stirring.  Finally, I added cornflour to thicken the sauce.  Meanwhile, the children kept track of the time whilst the puff pastry was in the oven.  With the washing up, this took the whole session, so the tart will be assembled and eaten today.  This is also better for the children as the Year 3 and 4 nature clubbers were at Robert Smyth yesterday.
