Thanks to Mr Norman planting onions and garlic last year, we were able to harvest them last week and enjoy onion tart. First of all, they went and picked a load of thyme to garnish the tart and then began finely chopping the onions.  We then sweated them down for 30 minutes so that they caramelised and spread them all over the base of the puff pastry.  Finally, parmesan was grated on the top along with the thyme.  Most of the class tried a slice and enjoyed it, including the staff and Mr Norman. The onions were so caramelised that they actually tasted sweet, so there was a bit of chemistry happening there too.
